An oven is not judged by its peak temperature

The tunnel oven is the clearest example of why the hottest point is no diagnosis. An oven is hot: that is its job. What decides whether the batch passes is the PROFILE — how even it is from zone to zone and how far it drifts from the setpoint. An oven with its peak in range and a cold zone at the inlet turns out raw product down one side of the belt.
